As promised in yesterday’s ERS blast email, we present to you the recipe for our special “Smokitalian” Wood-Fired Turkey.
Ingredients:
-1 boneless turkey (we deboned our own)
-3 cups breadcrumbs
-1 chopped onion
-3 cups chopped carrots
-4 oz. Sapore D’Oro Italian Black Truffle Shavings
-1 cup Sapore D’Oro Dried Cherries
-2 cups Sapore D’Oro Spanish Chestnuts
-8 pcs. of foie gras (2 oz. apiece)
-Sapore D’Oro Black Truffle Oil, Olive Oil, or broth (to taste)
-Salt and Pepper (to taste)
-skewers, kitchen twine, roasting pan
Steps
1. Debone your turkey and preheat your Marra Forni Wood-Fired Oven to 400 degrees fahrenheit. Saute onions and carrots with oil until tender. Remove from heat and add chestnuts, breadcrumbs and cherries. Salt and Pepper to taste.
2.Stuff your turkey, first with a layer of foie gras, and then with your stuffing. Frozen foie gras is preferable because it will melt in the oven, making your turkey even more flavorful. Roll your turkey around the stuffing and secure with skewers and twine. Drizzle with oil or broth made from the turkey.
3.Once in the oven, we cooked our turkey on either side for 15 minutes per side so that it would be crispy all over. After the turkey was browned all over the outside, we moved it to the opposite side of the oven away from the heat source, and let it cook for another 25 minutes at 425 degrees.
The wood-fired oven gave our turkey a delicious smoky wood flavor, but you can still make this recipe with a common kitchen oven. Just adjust the temperatures to suit your turkey’s weight. Remember, at Marra Forni we don’t like to wait, but it isn’t always practical or possible to cook everything at temperatures upwards of 900 degrees (especially at home).
